This delicious strawberry cream cheese pie is a great dessert, no matter what the occasion. The nutty crust is topped with a pineapple flavor cream cheese layer, and then a layer of strawberry gelatin goes on top. These desserts are unmolded when they are set, so the crust is on the top, and the strawberry gelatin layer is on the bottom. Garnish the serving plate with fresh strawberry slices and you have a classic, elegant looking dessert.
The creamy layer has pineapple gelatin in it, to give it a good consistency and a fruity flavor. You can use lemon gelatin or lime gelatin or another light colored gelatin instead of the pineapple flavor if you like. Also, use an eight ounce container of Cool Whip if you prefer it to whipping cream. The end result will be the same.
This cream cheese pie is really easy to make. You can make it in a nine by eleven inch baking tin if you do not want to make individual desserts. Perhaps you have tried store-bought strawberry pie or a strawberry chiffon pie before. Chiffon pies are made with whipped cream so they have a light and airy texture. The following recipe for fresh strawberry pie is made with strawberries and strawberry gelatin. This is an easy pie recipe to make and if strawberries are in season it makes great use of them.
The pastry crust is homemade because homemade pastry is so mouthwateringly good. Make sure you follow the recipe exactly. The water for the pastry must be ice cold and you must mix it using a knife, not your hands, else the shortening will melt and the pastry will not have a light, flaky texture. It can take a bit of practice to make a perfect pastry but it is something that is worth learning, if you want to make the best pie recipes.
Vanilla pudding is added to the gelatin mixture for flavoring. If you do not have any, you can add half a teaspoon of vanilla extract for the same results. This delicious strawberry pie recipe might not have the delicate, airy filling of a strawberry chiffon pie, but the gelatin gives it a wonderful texture and you can team a slice of this pie with a scoop of vanilla ice cream or a dollop of whipped cream, and you will have a wonderful dessert. This delicious cream cheese strawberry pie is made with vanilla ice cream as well as cream cheese, for an extra creamy filling. It is best to use fresh strawberries in this recipe but you could use canned or thawed strawberries if you wanted to. Use some of the syrup from the drained can instead of some of the boiling water if you like. If you want the pie to set quicker, reduce the amount of boiling water to one cup. If you are going to chill it for three or four hours, use a cup and a half. If you plan to chill it for longer, perhaps overnight, use a cup and two thirds of water. These amounts are up to you. Obviously using less water will give you a stronger lemon and vanilla flavor.
You can use this recipe for any fruit. If you have apples, blackberries, peaches or something else to use up, use whichever fruit you have in place of the strawberries. You can also use different flavors of gelatin. For a sweeter finish, leave out the cream cheese and use two cups (one pint) of vanilla ice cream instead. The cream adds a nice tart flavor to the strawberry pie though, which a lot of people prefer.
If you want to make a meringue topping for this strawberry cream cheese pie, beat a couple of egg whites with a quarter cup of sugar until you get stiff peaks. Spread this mixture over the strawberry cream pie and broil it for a few minutes until it is very lightly browned. Then let it cool in the refrigerator. You can do this with all different gelatin recipes actually. Heat melts gelatin so be careful when you do this but a couple of minutes is long enough to crisp the meringue so it should not affect the gelatin layer too much. Continue reading

You can use any of the strawberry gelatin varieties to make this mousse dessert, including strawberry-banana, strawberry-kiwi, wild strawberry or strawberry margarita flavor.
