Strawberry Brownie Recipe

Ingredients
  • 1 cup cooled melted butter
  • ½ cup cocoa powder
  • 1 egg
  • 1 tablespoon vanilla extract
  • 1 cup white sugar
  • 1½ cups cake flour
  • 1 pound sliced fresh strawberries
Instructions
  1. Preheat the oven to 350 degrees F and lightly grease a 9 inch pie plate.
  2. Whisk together the egg, melted butter and vanilla in a bowl.
  3. Puree about ¼ cup of the sliced strawberries and whisk into the batter.
  4. Sift together the sugar, cocoa powder and cake flour.
  5. Fold this into the batter, and mix until well incorporated.
  6. Use more flour if needed to end up with a mixture in between a cake batter and a cookie dough (the strawberries will add additional moisture).
  7. Gently fold in the remaining sliced strawberries and pour the batter into the prepared pie plate.
  8. Bake until a toothpick inserted into the center comes out clean, 30 to 40 minutes.
