  • 2 ½ cups graham cracker crumbs
  • ? cup melted butter
  • 1 ½ cups sugar
  • ¼ teaspoon almond extract
  • 1 cup boiling water
  • 1 package raspberry gelatin
  • 3 cups whipped cream
  • 8 oz cream cheese
  1. Combine the graham cracker crumbs with the melted butter and ½ cup of the sugar.
  2. Press this mixture on to the base and partway up the sides of a 9 inch spring form pan and refrigerate it for 20 minutes.
  3. Mix the raspberry gelatin powder into the boiling water until it dissolves.
  4. Let it sit until it thickens.
  5. Cream together the rest of the sugar with the cream cheese, and then add the almond extract and the thickened gelatin.
  6. Fold in 2 cups of the whipped cream.
  7. Spoon this mixture on to the crust and refrigerate for 2 hours or until firm.
  8. Serve with the remaining whipped cream.
