Delicious Creamsicle Orangesicle Cupcakes

Now this kind of gourmet is along the lines of wow factor rather than wrinkled nose factor, as with some foods encountered. Orange creamsicle cupcake begins with the luscious flavor of orange and is topped off with the most incredible frosting, delivering the one-two punch of the creamsicle and its simple, classic taste.

Hot summer days often see the ice cream version of orange creamsicles appear and now this recipe gives everyone the opportunity to have the flavor without the hot weather drip. Make it even more delicious with a bit of orange or vanilla flavored frosting to reinforce that delicious orangesicle look. On days when you feel particularly creative, make the frosting half vanilla and half orange, using a decorating tip and food coloring. Ingredients
  • Get ready for a group of happy family members when you make this wonderful treat.
Cupcake:
  • ¾ cup flour
  • 2 teaspoons orange flavoring
  • 7 tablespoons sugar
  • 2 eggs
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 3 tablespoons milk
  • 1 teaspoon pure vanilla extract
  • ½ teaspoons baking powder
  • 1 cup of softened margarine or butter
Spectacular Orange Topping and Incredible Vanilla Whip
  • Either frosting is special enough to use anytime you want to make a cake recipe spectacular. Make both toppings for an incredible orange and vanilla combination.
  • 1 cup of softened margarine or butter
  • 6 cups of powdered sugar (put in additional powdered sugar to preferred thickness)
  • ½ teaspoon orange extract
  • ½ teaspoon pure vanilla extract
  • ¼ cup orange juice
Incredible Vanilla Whip:
  • 2 cups of heavy cream
  • 3 tablespoons granulated sugar
  • 1 teaspoon pure vanilla extract
Instructions
Cupcake Preparation:
  1. Preheat the oven to 350 degrees F. Place decorative cupcake liners into a 12-hole cupcake pan.
  2. Separate the eggs. Beat the egg whites until they are stiff.
  3. Mix the salt, sugar, baking soda, vanilla, egg yolks, butter, baking powder, and flour in a large bowl.
  4. Add the orange flavoring and beat for one minute.
  5. Add the milk and stir.
  6. Fold in the egg whites.
  7. Divide the mixture evenly between the liners.
  8. Bake 18 minutes, using the toothpick test for doneness. Remove from oven and let cool.
  9. (Makes 12 cupcakes)
Orange Topping Preparation:
  1. Put the margarine in a medium glass bowl and beat it with a mixer on medium speed until creamy.
  2. On low speed, mix in 4 cups of the powdered sugar, the orange juice, orange extract and the vanilla until they are blended with the margarine.
  3. Mix the remaining sugar in on medium speed until the thickness you want is reached.
Incredible Vanilla Whip Preparation:
  1. Chill the whisk and the bowl from the mixer in the refrigerator for 20 minutes and then move them to the freezer for an additional 5 minutes.
  2. Remove the whisk and the bowl. Attach the whisk to the mixer. Pour the cream into the bowl and whisk on high until the cream has thickened.
  3. Reduce the speed to medium and add the sugar slowly while whisking it in.
  4. Turn the mixer off. Get out a hand whisk and add the vanilla extract, whisking it into the cream until the texture is smooth.
  5. Pipe on to the cupcakes or layer it in a swirl.
