Luscious Lemon and Strawberry Mousse Cake

For the Cake:
  • 3 eggs
  • 1 tablespoon lemon juice
  • ¾ oz cake flour
  • 1 ¾ oz cornstarch
  • ½ teaspoon vanilla extract
  • 7 tablespoons white sugar
  • 4 crushed vanilla cookies
For the Mousse:
  • 1 cup heavy cream
  • ¼ cup milk
  • ¼ cup boiling water
  • 2 tablespoons lemon juice
  • 2 egg yolks
  • 3 oz package strawberry gelatin
  • 1 tablespoon brandy
  • 6 tablespoons white sugar
  • 1 lb fresh strawberries
  1. Separate the egg yolks and whites. Beat the yolks with the sugar until the mixture is fluffy and pale, and then add the vanilla extract. Mix well.
  2. Preheat the oven to 300 degrees F.
  3. Beat the egg whites with the lemon juice in a clean, grease-free mixing bowl.
  4. Keep beating the mixture until it forms soft peaks.
  5. Add the yolk mixture to the egg white mixture and stir.
  6. Sift the cornstarch and cake flour into the egg mixture and stir gently.
  7. Pour this batter into a 12 inch round cake pan and bake it for about 35 minutes.
  8. Take the cake out of the oven and let it cool while you make the mousse.
  9. Take the stems out of the strawberries and rinse them.
  10. Blend half to make a puree and cut the rest into halves.
  11. Dissolve the gelatin in the water in a big bowl, and then stir in the milk.
  12. Add the sugar to the gelatin mixture, and then add the brandy, egg yolks, and lemon juice.
  13. Whip the cream until it is thick, then pour the gelatin mixture and the pureed strawberries into the cream, and mix well.
  14. Arrange some of the strawberry halves around the outside of the cake and smooth the mousse mixture over the top.
  15. Decorate the gelatin mousse cake with strawberry halves and cookie crumbs.
  16. Chill for 3 hours before serving.
