For The Cranberry Butter
  • 2 tablespoons powdered sugar,
  • ½ teaspoon grated orange zest,
  • ½ cup fresh or frozen cranberries,
  • 1½ cups softened butter,
For The Scones
  • ⅔ cup white sugar,
  • 2½ cups all-purpose flour,
  • ½ teaspoon baking soda,
  • ¾ cup buttermilk,
  • ¾ cup butter,
  • 1 cup chopped fresh or frozen cranberries,
  • 2½ teaspoons baking powder
  1. Just follow these simple directions!
  2. First make the cranberry butter.
  3. Cream the butter, the stir in the cranberries, powdered sugar and orange peel.
  4. Cover and refrigerate for at least an hour.
  5. Meanwhile, combine the dry ingredients in a bowl.
  6. Cut in the butter until the mixture resembles breadcrumbs, then stir in the cranberries.
  7. Stir in the buttermilk until just moistened.
  8. Turn on to a lightly floured surface and gently knead 6-8 times.
  9. Divide in half and pat each half into an 8-inch circle.
  10. Cut each circle into 8 wedges.
  11. Arrange them an inch apart on ungreased baking sheets and bake at 400 degrees F for 15-18 minutes or until lightly browned.
  12. Remove from the pans to wire racks and serve warm with the cranberry butter.
