  • 1 round angel food cake, 10 inches across
  • 2 cups whipped cream
  • ½ cup strawberry jelly
  • 1 package strawberry gelatin
  • 1 cup boiling water
  • 1 cup fresh strawberries
For the Frosting:
  • ½ teaspoon vanilla extract
  • 1 ½ tablespoons milk
  • 4 oz cream cheese
  • ½ stick butter
  • ½ lb powdered sugar
  1. Stir the strawberry gelatin powder into the boiling water until it dissolves then leave it to thicken.
  2. Cut the cake into 3 layers and put the bottom layer on a serving plate.
  3. Spread half the jelly over it and 1 cup of the whipped cream.
  4. Cover with the middle cake layer.
  5. Spread the rest of the strawberry jelly over it, and then top it with the other cup of whipped cream.
  6. Cover with the top cake layer.
  7. Beat the butter and cream cheese on a low speed, and then add the vanilla.
  8. Gradually add the powdered sugar.
  9. Add the milk slowly and keep beating until the frosting is smooth.
  10. Transfer it to a piping bag and pipe the frosting around the outside edge of the cake.
  11. Arrange the strawberries on top of the cake and pour the thickened gelatin over them.
  12. The frosted edge will stop the gelatin from running over the outside of the cake.
  13. Chill the strawberry gelatin cake in the refrigerator for 3 hours.
