- 2 ripe bananas
- 1 egg,½ cup corn oil
- 1 cup cream cheese softened
- 1 ½ cups flour
- 1 teaspoon baking soda
- 1 cup brown sugar

- Heat the oven to 350 degrees F. To preserve moistness, line your loaf pan with parchment paper.

- Bake for 45 minutes. The top crust should be golden brown. Insert a table knife straight down the center (the batter is thickest there) and if it comes out clean when you lift it out, the bread is done. If the knife has gooey batter, continue to bake and check again in 2 minutes.
- Place on a rack to cool. For easy even slicing, use an electric knife to cut the bread.

- 3 bananas ripe and mashed
- ½ cup butter
- 2 eggs
- 1 cup sugar
- 1 ½ cup unbleached flour
- ½ teaspoon lemon juice
- ½ teaspoon pure vanilla extract
- 1 teaspoon baking soda
- 1 ½ tablespoons hot water
- Get out a 9 x 5 x 3 inch loaf pan and butter it, even if it is a nonstick type.
- Preheat the oven to 350 F. This is quite important to achieving moist banana bread.
- Cream the sugar and butter in a large bowl. Glass bowls are best for this, but stainless steel and plastic are sufficient.

- 2 cups ripe mashed bananas
- 1 ¼ cups sugar
- 2 ½ cups flour
- 1 teaspoon ground cinnamon
- 5 eggs
- 1 ¼ teaspoons baking soda
- 1 teaspoon pure vanilla extract
- 2 small boxes instant vanilla pudding mix (3.4 ounces each)
- 1 cup vegetable oil
- 1 teaspoon salt
- 1 cup chopped walnuts
- Preheat oven to 350 F. Grease two 8x4-inch loaf pans.
- Combine the sugar, baking soda, flour, dry pudding mix, salt, and cinnamon in a large bowl.
- Use another large bowl and put in the vanilla, eggs, bananas and oil. Use a whisk to mix them. Add the wet mixture to the dry mixture and stir to moisten the dry ingredients.
- Stir in the nuts.
- Divide the batter equally between the two loaf pans. Bake for 55 minutes and check doneness with a toothpick.
- Remove from oven when done and let cool 10 minutes.
- Take the bread out of the pans and set them on wire racks to cool.
Note: This recipe uses two small boxes of instant vanilla pudding. The large box only has 5.1 ounces, less than the 6.8 ounces needed.
