  • 1 ½ cups brown sugar
  • 1 teaspoon ground cinnamon
  • 2 ½ cups all-purpose flour
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 cup buttermilk
  • 1 tablespoon butter
  • ½ cup white sugar
  • 1 egg
  • 2 ½ cups chopped rhubarb
  • 1 teaspoon salt
  • ½ cup pecans (optional)
  1. Preheat the oven to 325 degrees F.
  2. Mix the oil, egg and brown sugar together, then add the milk, salt, baking soda, flour, vanilla and cinnamon.
