  • 15 oz refrigerated piecrust
  • 1 package strawberry gelatin
  • ½ teaspoon vanilla extract
  • ½ cup fresh strawberries
  • ½ cup fresh raspberries
  • ½ cup fresh blueberries
  • 1 ¼ cups water
  • 3 tablespoons cornstarch
  • 1 ¼ cups sugar
  1. Toss the strawberries, raspberries, and blueberries with ¼ cup of the sugar in a big bowl. Cover and chill for 8 hours or overnight, then drain off the liquid.
  2. Preheat the oven to 450 degrees F.
  3. Fit the piecrust into a 9 inch pie dish, then fold the edges underneath and crimp them.
  4. Prick the sides and base with a fork and bake for about 8 minutes or until golden brown.
  5. Combine the rest of the sugar with the cornstarch in a small pan, then whisk in the vanilla and water.
  6. Cook, whisking all the time, for about 7 minutes or until thick.
  7. Whisk the gelatin powder into the cornstarch mixture, and then spoon the berries into the cooled piecrust.
  8. Pour the warm glaze over the top, pressing it down well to make sure all the berries are coated in it.
  9. Chill for 3 hours, and then serve with whipped cream or ice cream.
