  • 1 ½ cups finely crushed vanilla wafers
  • ⅓ cup melted butter
  • 1 package lemon gelatin
  • 2 cups ice cubes
  • ¾ cup boiling water
  • 1 ½ cups whipped cream
  • 3 kiwis
  1. Peel and slice 2 of the kiwis and finely chop the other one.
  2. Combine the melted butter and vanilla wafer crumbs and press the mixture firmly over the base and up the sides of an 8 inch pie plate.
  3. Dissolve the lemon gelatin in the boiling water until it is totally dissolved, then stir in the ice. Keep stirring until the gelatin is thick, and then remove any ice, which did not melt.
  4. Add the whipped cream to the gelatin, and then stir in the finely chopped kiwi.
  5. Refrigerate the gelatin mixture until it is very thick, and then spoon it into the pie crust.
  6. Arrange the kiwi slices over the top, making sure they overlap, and chill the kiwi pie for 3 hours or until the gelatin layer is very firm.
