Ingredients
  • ½ cup white sugar
  • 2 tablespoons cornstarch
  • ½ teaspoon finely grated orange zest
  • ¼ cup brandy
  • 3 cups vanilla ice cream
  • ¼ cup water
  • ¼ teaspoon cherry extract
  • ¼ cup orange juice
  • 1 lb pitted Bing or other dark, sweet cherries (or use frozen pitted cherries)
  • Whipped cream and shredded coconut, to serve (optional)
Instructions
  1. Whisk the sugar and cornstarch together in a pan.
  2. Stir in the water and orange juice. Bring the mixture to a boil over a medium-high heat and whisk until thickened.
  3. Add the cherries and orange zest, return to a boil, then reduce heat and simmer for 10 minutes.
  4. While the cherries are cooking, spoon the ice cream into serving bowls.
  5. Remove the cherries from the heat, and stir in the cherry extract.
  6. Pour in the brandy, and ignite with a long lighter.
  7. Gently shake the pan until the blue flame has gone out by itself.
  8. Add the cherries over the bowls of ice cream.
  9. Garnish with whipped cream and shredded coconut, if liked.
