Ingredients
Bread Pudding Ingredients:
  • 2 cups milk (or Half & Half)
  • ¼ teaspoon ground nutmeg
  • 1 teaspoon vanilla extract
  • ¼ cup butter
  • ⅔ cup brown sugar
  • 3 eggs
  • 2 teaspoons cinnamon
  • 3 cups bread (preferably French bread), torn into small pieces
  • ½ cup raisins (optional but good)
Easy Bread Pudding Sauce Ingredients:
  • 1 cup whole milk
  • 2 Tbsp. butter
  • ⅓ cup granulated white sugar
  • 1 tsp. vanilla
  • 1 Tbsp. flour
  • dash of salt
Instructions
Bread Pudding Directions:
  1. Warm the milk (or cream) until a film forms over the top.
  2. Combine the butter with the milk, stirring until the butter melts.
  3. Cool to lukewarm.
  4. Combine the sugar, eggs, cinnamon, nutmeg, and vanilla.
  5. Beat with an electric mixer at a medium speed for a minute.
  6. Slowly add the milk mixture.
  7. Place the bread in a lightly-greased 1½ quart casserole.
  8. Sprinkle with raisins if desired, then pour the batter on top of the bread.
  9. Bake at 350 degrees F for 45 to 50 minutes or until set.
  10. Serve warm.
  11. If you make the sauce to put on top of your bread pudding, adjust the sugar in the bread pudding recipe: change it to ⅓ cups sugar (the sauce has the other ⅓ cup in it).
Making the Sauce for the Bread Pudding:
  1. Mix everything together and bring to a boil for 3 - 4 minutes, stirring constantly.
  2. Set aside for 5 minutes, then pour on warm bread pudding.

Or, as with this recipe, it can be served cold and turned onto a separate dish. Plan ahead ? this bread pudding needs to rest for at least eight hours after it is baked.

Chocolate Bread Pudding Ingredients:
  • 1 (8 ounce) loaf baguette
  • ½ cup unsalted butter, melted
  • 1 cup semisweet chocolate chips
  • 3 cups heavy cream
  • 1 cup milk
  • 2 eggs
  • 8 egg yolks, room temperature
  • ½ cup white sugar
  • 1 tablespoon vanilla extract
Chocolate Bread Pudding Sauce Ingredients:
  • 2 ounces unsweetened chocolate, chopped
  • 1 tablespoon butter
  • ⅓ cup boiling water
  • ½ cup white sugar
  • 3 tablespoons corn syrup
  • 1 teaspoon vanilla extract
Instructions
Chocolate Bread Pudding Directions:
  1. Preheat oven to 350 degrees F. Grease a 9x13 baking dish.
  2. Slice baguette in ¼ inch slices and brush one side with melted butter. Place on a baking sheet and into preheated oven until golden, about 1 minute.
  3. Melt chocolate chips in microwave or double boiler. Set aside.
  4. In a medium saucepan over low heat, heat cream and milk until warm. Do not scald.
  5. In a large bowl beat eggs, egg yolks, ½ cup sugar and 1 tablespoon vanilla until smooth. Blend in warm cream mixture a little at a time.
  6. Whisk egg mixture into melted chocolate until smooth.
  7. Arrange toasted bread slices, buttered side up, in prepared dish until dish is full.
  8. Pour chocolate mixture over bread and let rest 40 minutes, until liquid is absorbed.
  9. Line a roasting pan with a damp kitchen towel. Place baking dish on towel, inside roasting pan, and place roasting pan on oven rack.
  10. Fill roasting pan with boiling water to reach halfway up the sides of the baking dish. Bake 40 to 50 minutes, until knife inserted in center comes out clean.
  11. Let rest 8 hours or overnight.
Chocolate Bread Pudding Sauce:
  1. Melt unsweetened chocolate in small saucepan over low heat. Stir in 1 tablespoon butter until melted.
  2. Stir in boiling water, ½ cup sugar and corn syrup until smooth.
  3. Increase heat to medium and bring to a boil Boil gently 3 minutes.
  4. Remove from heat and stir in 1 teaspoon vanilla.
  5. To serve: Warm bottom of baking dish, loosen edges of pudding with a knife then invert cold pudding onto a serving platter.
  6. Serve with warm chocolate sauce.

Traditional British Bread and Butter Pudding Recipe

  • 8 slices white bread
  • 3 ounces sultanas (85g)
  • 4 ounces brown sugar (113g)
  • 3 cups whole milk
  • 3 large eggs, beaten
  • 1 teaspoon vanilla extract
  • ¾ teaspoon cinnamon
  • ½ teaspoon salt
  • butter (for buttering the bread and greasing the baking dish)
Instructions
  1. Preaheat oven to 325°F (170°C)
  2. Grease an oven proof baking dish.
  3. Evenly butter each of the slices of bread on both sides, then cut each slice into 4 triangles.
  4. Place a layer of the buttered bread on the bottom of the dish, slightly overlapping each triangle.
  5. Sprinkle sultanas and brown sugar evenly across the bread for the second layer.
  6. Continue layering bread then sultanas and brown sugar until all the bread is used.
  7. Sprinkle the top of the pudding with sultanas and sugar.
  8. Beat together the milk, eggs, cinnamon, vanilla and salt. Pour this mixture on top of everything.Allow to stand for 30 minutes so the liquid is fully absorbed.
  9. Place baking dish in the oven and bake for 30 to 40 minutes, or until top is golden brown.
